Chef John Shaw, Executive Chef
Chef John Shaw proudly took the reigns as Executive Chef of the brand-new Boathouse restaurant in April 2018, focusing on seaside favorites prepared in fresh, creative ways. Beloved menu items such as buffalo shrimp, crab tacos, and Maine lobster spring rolls – met with rave reviews from diners at The Tides Beach Club for the past 7 summers – have found a new home at The Boathouse alongside beautifully presented and Asian inspired dishes. Born and raised in Kennebunk, Maine, Shaw honors his coastal roots by emphasizing New England flavors and local Maine products, enhanced by the Asian influences he gained during his frequent travels to the Philippines. Prior to joining The Boathouse team as Executive Chef, Shaw worked as Executive Chef at The Tides Beach Club, and Executive Chef at the Kennebunkport Inn. And after Celebrity Chef Gordon Ramsay popped in for dinner, he told Portland magazine that his meal at One Dock – under the direction of Chef Shaw – was the best meal he had while visiting Maine that year. Shaw has also worked as Chef of the night dining operation at Four Point’s restaurant at Steamboat Ski Resort in Colorado; a Sous Chef at Ye Olde England Inne in Stowe, Vermont; Sous Chef at Sheraton Resort Steamboat Springs, Colorado; and Chef de Cuisine at Windows on the Water in Kennebunk, Maine. He graduated from the New England Culinary Institute in Montpelier, Vermont and has a diploma in Austrian pastry and specialties cuisine from Tourismusschulen Bad Gleichenberg in Austria.
