John Shaw

Chef John Shaw, a graduate of the New England Culinary Institute, has cultivated a distinguished culinary career defined by refined technique, coastal inspiration, and innovative flavor. His professional experience includes serving as Sous Chef at Ye Olde England Inne, The Tides Beach Club, and culinary leadership roles at Four Points Lodge and Sheraton Steamboat Resort Villas. His dedication to exceptional cuisine has earned widespread recognition, including praise from internationally renowned chef Gordon Ramsay, who described Shaw’s cuisine as the finest meal he experienced in Maine that year.

Chef John Shaw’s “Classic Maine” menu blends the flavors of coastal New England with the vibrant culinary influences he discovered during his travels throughout the Philippines and Asia. Centered around fresh Maine seafood and locally inspired ingredients, the menu offers a unique twist on regional favorites. Signature dishes include lobster fried rice, Tonkotsu ramen, Vietnamese lobster spring rolls, classic fish and chips, fresh lobster rolls, and house-made Maine blueberry crisp—creating a dining experience that is both comforting and unexpected.
