Meet Chef
John Shaw

A graduate of the New England Culinary Institute, Shaw’s culinary career spans a range of respected roles, including Sous Chef at Ye Olde England Inne in Stowe, Vermont; Chef at The Tides Beach Club; and Chef at Four Points Lodge and the Sheraton Resort in Steamboat Springs, Colorado. His work has also earned high praise from celebrity chef Gordon Ramsay, who commended Shaw’s culinary skill and described one of his meals as the best in Maine that year.

Inspired Cuisine

Chef John Shaw’s “Classic Maine” menu celebrates his coastal roots with a focus on New England flavors and the freshest Maine seafood, elevated by Asian influences inspired by his winter travels throughout the Philippines and across Asia. The result is a distinctive pan-Asian–inspired coastal cuisine featuring dishes such as lobster fried rice, tonkotsu ramen, and Vietnamese-style lobster spring rolls, alongside local favorites like fish and chips, classic Maine lobster rolls, and Maine blueberry crisp.
